Yummy, Easy & Healthy No Bake Energy Balls!

Here are those energy balls that I promised you before I got sick last week! I'm feeling better, but still taking it easy . . . I promise. ❤ Aisha and her whole family are on the mend as well! Alhamdulillah!!! Thanks to all of you who sent duaas, prayers, positive thoughts and well wishes. 😊

Now, on to the "RECIPE"!
Were you just now wondering why I put the word RECIPE in quotes? It's because this recipe is so easy, it doesn't require one. I've actually never made it the same way twice!

I don't measure a thing, because you just can't mess this "recipe" up, unless you're really trying to! And even then, it would probably still be yummy! So, girls, we are going to wing it! Nothing rocket science about this, just yummy and nutritional goodness.

Hey, you can even have the kids or grandkids help you out!  So let me tell you what I put in these little amazeballs!

They've got quick oats, faux rice krispies, chopped dates, chia seeds, poppy seeds, peanut butter, honey and this fantastic salad topper mix I picked up at Costco.

The salad topper mix contains "A tart and savory mixture of cranberries and seeds". And let me tell you, it is delicious! It's organic and the seeds are tamari sunflower seeds and pumpkin seeds! Perfect for a quick pick-me-up on it's own! It's also great on salads, of course, but has now met it's new best friend . . . The Energy Ball! 😊

Now get yourself a big bowl to mix all of your ingredients together. The spoon is mostly for show as you're going to get in, down and dirty like, combining all your ingredients like it was a mud pie when you were a kid! (Bonding moment with the kids, right?)

Gather all of your ingredients and start tossing them in the bowl. The oats and cereal are of course your main ingredient,  so you'll want the most amount of these. Go ahead, pour some in the bowl. Now add your chopped dates, peanut butter, honey, chia & poppy seeds and salad topper mix.

Now make sure you've got everything you need before you start mixing, 'cause you don't want to stop once you've started. And if the kids are helping, have them wash their hands, if you haven't already done so. πŸ˜‰  Keep mixing till it feels like you can form a ball. If the concoction feels too dry, add some more peanut butter and honey, too wet . . . add more oats & cereal, till you get a ball that holds it's shape.

That's it! Start the assembly line!!! Roll them into whatever size appeals to you. Mine are about a 1" ball, give or take.

Roll a tray full of these little cuties. You can sprinkle a bit of icing sugar on top even, well just 'cause it's fun and looks pretty! πŸ’• Go ahead and pop them in the fridge now for about an hour. Remove and store in individual snack baggies the kids can just grab or you can pop in your purse for an energy boost! These freeze great too, so make as many as you like. They keep about a week in the fridge, if they last that long at your house! πŸ˜‰

That's it, ladies! I hope you L❤VE these delightful little bites of nourishing yumminess as much as we do! Feel free to add or subtract ingredients to suit you and your family. Enjoy!
